Quinoa & Black Bean Chilaquiles

This super simple crockpot meal is a meat free meal where you won't miss the meat for my meat eaters! Try this one on MeatLESS Monday.

Chilaquiles is basically just a fancy word for nachos as this crockpot dish is served over crispy tortilla chips. I used non GMO RW Garcia 3 seed Veggie strips for the first time and the family loved them!

What you need:

2 Tablespoon Extra Virgin Olive Oil
1 medium Onion Chopped
1 bell pepper chopped
1 jalapeno or serrano pepper, seeded/minced
1 can of black beans 15 oz
1 can of diced tomatoes or 2 fresh diced
1 cup quinoa (cooked)
12 onces mushroom chopped
2 teaspoons cumin
1 tbsp chili pepper
1tsp garlic powder

Tortilla Chips

*Jar of organic Salsa

*plain organic yogurt
*gaucamola
* shredded cheese or nutritional yeast (vegan cheese)

What you do:

1) Heat the oil in pan over medium heat. Add onion & peppers and cook 5 mins or until onion is tender.
2) Add to Crockpot`and throw in the rest of the ingredients cook on low 6 hours or high 2 hours
3) stir and serve over tortilla chips with guacamole, plain yogurt and salsa as extra toppings
